Dear Diary,
On the correct making of tacos:
The problem with most people and the tacos they make is that they fill them too full. When making a taco, the average Joe will invariably have eyes bigger than his stomach, and ignore the sense of taking taco space into account. Therefore, the number one element of a good taco is the right amount of filling. The second main mistake made during the creation of tacos is management of space. Many people will simply pile their toppings in the center of the tortilla. This is wrong. In order to keep a taco together after folding, toppings should be arranged in a line. The third, but least important mistake in taco birth is the order of toppings. This, of course, is up to opinion, but the meat should go first, then cheese, salsa, lettuce (and other such toppings including, but not limited to, onions, cilantro, and raw tomatoes) and, lastly, sour cream. The final mistake is the actual folding. If the line of filling is, in essence, a rectangle, the sides of the tortilla above and below the short ends of the rectangle should be folded down first. Then the longer sides should be folded, creating a relatively mess free bottom end, much like a good burrito. But that’s another topic altogether.
